  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots and potatoes, cook for another 5 minutes.
  4. Stir in vegetable broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer until vegetables are tender.
  6. In a separate bowl, mix heavy cream and flour, then stir into the soup.
  7. Simmer for 5 more minutes until thickened. Add peas and stir well.
  8. Serve warm.
