  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 cup pie crust, cut into strips (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and garlic, sautéing until translucent.
  3. Stir in the mixed vegetables, thyme, salt, and pepper, cooking for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
