Vegan Broccoli Cheddar Soup Recipe

A delicious and creamy vegan broccoli cheddar soup that warms the soul.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup cashews, soaked
  • 1/4 cup nutritional yeast
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
  2. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and let simmer until broccoli is tender.
  3. In a blender, combine soaked cashews, nutritional yeast, turmeric, black pepper, and salt. Pour in some of the soup broth and blend until smooth.
  4. Add blended mixture back to the pot and stir to combine. Heat through and serve warm.

Notes

  • For a thicker soup, add more cashews.
  • Feel free to add more spices to taste.
