  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, half of the enchilada sauce, cheese, onion, garlic powder, cumin, salt, and pepper.
  3. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  5. Bake for 20-25 minutes or until the cheese is bubbly.
