  • 1 pound chicken breasts
  • 3 cups corn, frozen or fresh
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add corn, potatoes, onion, and garlic on top of the chicken.
  3. Pour in the chicken broth and season with salt, pepper, and thyme.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Remove the chicken, shred it, and return it to the chowder.
  6. Stir in heavy cream and heat for an additional 30 minutes.
