- 2 medium spaghetti squashes
- 1 pound chicken breast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup vegetable broth
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- Preheat oven to 400°F (200°C).
- Cut the spaghetti squashes in half lengthwise, scoop out the seeds, and drizzle with olive oil.
- Place cut side down on a baking sheet and roast for 30-40 minutes.
- In a skillet, heat olive oil over medium heat, add chicken and cook until golden brown.
- Add garlic, cherry tomatoes, vegetable broth, Italian seasoning, and red pepper flakes. Cook for 10 minutes.
- Stir in spinach until wilted, then remove from heat.
- Once spaghetti squashes are cooked, scrape the insides to create ‘noodles’ and serve the Tuscan chicken mixture over the top.
- Sprinkle with Parmesan cheese before serving.
