- 2 cups sweet potatoes, peeled and diced
- 6 large eggs
- 1 cup milk
- 1 cup turkey bacon, cooked and crumbled
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and milk.
- Add the sweet potatoes, turkey bacon, bell pepper, onion, garlic powder, paprika, salt, and pepper. Mix well.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the casserole is set and golden on top.
