Sweet Potato Egg Breakfast Casserole

A delicious breakfast casserole featuring sweet potatoes, eggs, and turkey bacon.

  • 2 cups sweet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the sweet potatoes, turkey bacon, bell pepper, onion, garlic powder, paprika, salt, and pepper. Mix well.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the casserole is set and golden on top.
  6. Let it cool slightly before slicing and serving.
