  • 1 cup cranberries, fresh or frozen
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup grated cheese, such as Gruyère

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced sweet potatoes and cranberries.
  3. In another bowl, mix the heavy cream, brown sugar, cinnamon, nutmeg, and vanilla extract.
  4. Pour the cream mixture over the sweet potato and cranberry mixture, tossing to coat.
  5. Transfer the mixture into a greased baking dish. Sprinkle the grated cheese on top.
  6. Bake for 45-50 minutes or until the sweet potatoes are tender and the top is golden brown.
  7. Let it cool for a few minutes before serving.

  • For a vegan option, replace heavy cream with coconut cream and cheese with a dairy-free alternative.
