Spinach Bacon Pumpkin Mac and Cheese

A deliciously creamy mac and cheese featuring spinach, bacon, and pumpkin, perfect for cozy nights.

  • 1 pound elbow macaroni
  • 4 slices bacon
  • 2 cups spinach, chopped
  • 1 cup pumpkin puree
  • 2 cups cheese, shredded
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package directions.
  2. In a skillet, cook bacon until crispy. Remove and crumble.
  3. In the same skillet, sauté spinach until wilted.
  4. Mix pumpkin puree, cheese, milk, garlic powder, onion powder, and cooked macaroni in a large bowl.
  5. Add crumbled bacon and sautéed spinach to the mixture and stir well.
  6. Transfer to a baking dish and bake at 350°F for 20 minutes.
