Slow Cooker Honey Garlic Chicken and Veggies

  • 4 boneless, skinless chicken thighs
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1/2 cup onion, diced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the sliced carrots, chopped bell peppers, and diced onion on top of the chicken.
  3. In a bowl, mix together honey, soy sauce, minced garlic, and grated ginger. Pour this mixture over the chicken and veggies.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, remove chicken and whisk in cornstarch to thicken the sauce if desired.
  6. Serve chicken and veggies with the sauce poured over the top.
