SALMON IN ROASTED PEPPER SAUCE

  • 2 salmon fillets
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the bell peppers on a baking sheet and drizzle with olive oil. Roast for 20-25 minutes until they are charred and tender.
  3. Once roasted, place the peppers in a blender with garlic, salt, black pepper, oregano, and lemon juice. Blend until smooth.
  4. Season the salmon fillets with salt and black pepper. Heat a skillet over medium heat and sear the salmon on both sides until golden brown.
  5. Transfer the salmon to a plate and pour the roasted pepper sauce over the top. Serve warm.
