Roasted Sweet Potato Rounds with Honey & Feta Bliss

  • 1/4 cup honey
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the sweet potatoes into round discs, about 1/2 inch thick.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, pepper, and paprika.
  4. Arrange the sweet potato rounds on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes until golden and tender, flipping halfway through.
  6. Once removed from the oven, drizzle honey over the rounds and sprinkle with feta cheese and parsley.
  7. Serve warm and enjoy!
