Roasted Squash Gnocchi Bake

  • 2 cups roasted squash, pureed
  • 1 cup ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon nutmeg
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the pureed roasted squash, ricotta cheese, garlic powder, nutmeg, salt, and pepper.
  3. Cook the gnocchi according to package instructions, then drain and add to the mixture.
  4. Transfer the mixture to a baking dish, spreading it evenly.
  5. Top with grated mozzarella and Parmesan cheese.
  6. Drizzle with olive oil.
  7. Bake for 25-30 minutes, or until the top is golden and bubbly.
  8. Let cool for a few minutes before serving.
