- 1 cup fresh raspberries
- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1 cup brewed espresso, cooled
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger cookies
- Cocoa powder for dusting
- In a mixing bowl, whisk together mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and creamy.
- Dip each ladyfinger into the cooled espresso for a few seconds, making sure not to soak them.
- Layer dipped ladyfingers in the bottom of a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add a layer of fresh raspberries on top of the mascarpone.
- Repeat the layers with the remaining ingredients.
- Dust the top with cocoa powder.
- Refrigerate for at least 4 hours before serving.
Notes
