Raspberry Tiramisu

A delightful and fruity take on the traditional Tiramisu, featuring layers of creamy mascarpone, espresso-soaked ladyfingers, and fresh raspberries.

Ingredients

  • 1 cup fresh raspberries
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1 cup brewed espresso, cooled
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a mixing bowl, whisk together mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth and creamy.
  2. Dip each ladyfinger into the cooled espresso for a few seconds, making sure not to soak them.
  3. Layer dipped ladyfingers in the bottom of a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add a layer of fresh raspberries on top of the mascarpone.
  6. Repeat the layers with the remaining ingredients.
  7. Dust the top with cocoa powder.
  8. Refrigerate for at least 4 hours before serving.

Notes

  • Try adding a splash of coffee liqueur to the espresso for an extra kick.
  • Using frozen raspberries is an option if fresh ones are not available.
