  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, mix the sugars, pumpkin, oil, eggs, and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Drop tablespoonfuls of dough onto a lined baking sheet.
  6. Bake for 12-15 minutes until lightly browned.
  7. Let cool before filling.
  8. To make the filling, beat together cream cheese, powdered sugar, milk, and vanilla until smooth.
  9. Spread the filling on one cookie and sandwich with another.
