  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine sugars, pumpkin puree, oil, eggs, and vanilla until well blended.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped pecans and rolled oats.
  6. Pour the batter into the prepared pan and smooth the top.
  7. For the streusel topping, combine oats, brown sugar, and butter until crumbly; sprinkle on top of the batter.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool, then drizzle with maple glaze before serving.
