Pozole Rojo

A savory and comforting dish that combines tender beef with the smoky flavor of turkey bacon, perfect for family dinners.

  • 2 pounds beef chuck roast
  • 1 cup turkey bacon, diced
  • 6 cups chicken broth
  • 1 can (15 oz) hominy, drained
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded lettuce
  • 1 radish, thinly sliced
  • 1 avocado, diced
  • 1/2 cup lime juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sautéing until translucent.
  2. Brown the beef chuck roast on all sides, then remove from the pot.
  3. Add the turkey bacon to the pot and cook until crispy.
  4. Return the beef to the pot, and add the chicken broth, hominy, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce to a simmer. Cover and cook for 2 hours or until the beef is tender.
  6. Remove the beef, shred it, and return it to the pot.
  7. Stir in lime juice just before serving.
  8. Serve hot topped with lettuce, radish, and avocado.

Notes

  • For a spicier version, include additional chili powder or jalapeños.
  • Adjust cooking time based on the thickness of the beef.
