Pimento Cheese Hash Brown Casserole

A delicious twist on a classic dish, combining the creamy richness of pimento cheese with crispy hash browns and savory turkey bacon.

  • 1 pound frozen hash browns
  • 8 ounces pimento cheese
  • 6 strips turkey bacon
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the hash browns, pimento cheese, and half of the cheddar cheese.
  3. Cook the turkey bacon until crispy, then crumble and add to the mixture.
  4. In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  5. Pour the egg mixture over the hash brown mixture and stir to combine.
  6. Transfer the mixture to a greased baking dish and spread evenly.
  7. Top with the remaining cheddar cheese.
  8. Bake for 45-50 minutes or until the top is golden brown and the casserole is set.
  9. Let it cool for a few minutes before serving.

Notes

  • For extra flavor, add chopped green onions or bell peppers.
  • Can be prepared ahead of time and stored in the refrigerator before baking.
