  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup cooked turkey bacon, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped turkey bacon.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes, or until the muffins are golden and a toothpick comes out clean.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • These muffins are best served warm with syrup.
  • They can also be frozen for later use.
