One-Pan Bold Honey BBQ Chicken Rice

  • 4 pieces boneless chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mixed vegetables (frozen)

Instructions

  1. In a large pan, heat some oil over medium heat.
  2. Add the chicken thighs and sear until golden brown.
  3. Mix the rice, chicken broth, and honey BBQ sauce, and pour over the chicken.
  4. Add garlic powder, onion powder, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and cover. Simmer until rice is cooked.
  6. Stir in the mixed vegetables and cook for an additional 5 minutes.
