One Pot Cowboy Spaghetti

A hearty and comforting dish featuring spaghetti, turkey bacon, and a mix of vegetables, all cooked in one pot for easy cleanup.

Ingredients

  • 12 ounces spaghetti
  • 8 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 cup parmesan cheese, grated

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, bell pepper, and garlic. Sauté until softened.
  3. Add chicken broth, diced tomatoes, Italian seasoning, and black pepper. Bring to a boil.
  4. Add spaghetti and cook according to package instructions until al dente.
  5. Stir in the cooked turkey bacon and parmesan cheese before serving.

Notes

  • Feel free to add additional vegetables of your choice.
  • For a spicy kick, add red pepper flakes.
