Monterey Chicken One Pan Orzo

An easy and delicious one pan meal featuring Monterey chicken and orzo, topped with turkey bacon.

Ingredients

  • 2 cups orzo pasta
  • 4 chicken breasts
  • 1 cup turkey bacon, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 4 cups chicken broth
  • 1 cup cheese, shredded

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Season chicken breasts with garlic powder, paprika, and Italian seasoning.
  4. Push bacon to side of the skillet, add chicken breasts, and sear until golden brown.
  5. Add orzo and chicken broth to the skillet, stir well.
  6. Bring to a boil, then reduce heat and cover, cooking until orzo is tender and chicken is cooked through.
  7. In the final moments, sprinkle cheese on top and let it melt.

Notes

  • For extra flavor, marinate the chicken beforehand.
  • Feel free to add vegetables like bell peppers or spinach.
