Mini Chocolate Chip Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, oil, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the mini chocolate chips.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Let the muffins cool before serving.

Notes

  • For a richer flavor, add a pinch of cinnamon.
  • Feel free to substitute semi-sweet chocolate chips with dark chocolate chips.
