Maple Bacon Pancake Bites

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup maple syrup

Instructions

  1. In a large bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the chopped bacon and maple syrup.
  5. Preheat a mini muffin pan and lightly grease it.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake at 350°F for 12-15 minutes or until golden brown.
  8. Allow to cool slightly before removing from the pan.

Notes

  • For extra flavor, drizzle more maple syrup on top before serving.
  • You can also add chocolate chips to the batter for a sweet twist.
