3 ripe mangoes
1 cup mascarpone cheese
1 cup heavy whipping cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup brewed coffee, cooled
24 ladyfinger cookies
Instructions
Peel and puree 2 mangoes in a blender until smooth.
In a mixing bowl, combine mascarpone, heavy cream, sugar, and vanilla. Whip until soft peaks form.
Fold the mango puree into the mascarpone mixture.
Dip ladyfingers in cooled coffee and layer in a dish.
Spread half of the mango mascarpone mixture over the ladyfingers.
Repeat the layers and finish with a layer of mango puree.
Chill in the refrigerator for at least 4 hours before serving.
