Mango Tiramisu

Enjoy a tropical spin on the traditional tiramisu with this Mango Tiramisu recipe that combines layers of creamy mango goodness with coffee-infused ladyfingers.

  • 3 ripe mangoes
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 24 ladyfinger cookies

Instructions

  1. Peel and puree 2 mangoes in a blender until smooth.
  2. In a mixing bowl, combine mascarpone, heavy cream, sugar, and vanilla. Whip until soft peaks form.
  3. Fold the mango puree into the mascarpone mixture.
  4. Dip ladyfingers in cooled coffee and layer in a dish.
  5. Spread half of the mango mascarpone mixture over the ladyfingers.
  6. Repeat the layers and finish with a layer of mango puree.
  7. Chill in the refrigerator for at least 4 hours before serving.
