Lasagna al Pesto Recipe

This Lasagna al Pesto recipe combines the rich flavors of pesto with layers of lasagna noodles, cheese, and fresh vegetables, creating a dish the whole family will love.

Ingredients

  • 9 sheets lasagna noodles
  • 2 cups pesto sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large baking dish, spread a layer of pesto sauce on the bottom.
  3. Layer 3 lasagna noodles over the sauce.
  4. Spread half of the ricotta cheese over the noodles, followed by a layer of spinach and mozzarella cheese.
  5. Add another layer of pesto, then repeat the layers with more noodles, ricotta, spinach, and mozzarella.
  6. Finish with a final layer of noodles, pesto, and top with Parmesan cheese.
  7. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
  8. Let it cool for 10 minutes before slicing and serving.

Notes

  • For a vegetarian option, add grilled vegetables between the layers.
  • Feel free to adjust the amount of cheese to your liking.
