Italian Sausage and White Bean Soup

  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the chopped onion, garlic, carrots, and celery; sauté until the vegetables are softened.
  3. Stir in the diced tomatoes, white beans, chicken broth, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Season with salt and pepper before serving.
