2 cups all-purpose flour
1 cup rolled oats
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
2 cups ripe mango, diced
1 tablespoon lemon juice
Instructions
Preheat oven to 350°F (175°C).
In a bowl, mix flour, oats, sugars, baking powder, and salt.
Add softened butter and mix until crumbly.
Press half of the mixture into a greased baking dish.
In another bowl, combine diced mango with lemon juice, and spread it over the crust.
Sprinkle the remaining crumb mixture on top.
Bake for 30-35 minutes or until golden brown.
Let cool before slicing into bars.
