Instant Pot Loaded Baked Potato Soup

A creamy and hearty soup made in the Instant Pot, featuring loaded baked potato flavors with turkey bacon and chicken ham.

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Dice the potatoes and set aside.
  2. In the Instant Pot, sauté the turkey bacon until crispy. Remove and crumble.
  3. Add the onion and garlic, sautéing until translucent.
  4. Add the potatoes and chicken ham, mix well.
  5. Pour in the chicken broth and season with salt and pepper.
  6. Seal the Instant Pot and cook on high pressure for 10 minutes.
  7. Once done, use quick release and stir in the heavy cream and cheddar cheese until melted.
  8. Serve topped with the crumbled turkey bacon.

  • For added flavor, consider adding other vegetables like carrots or celery.
