  • 1 cup heavy cream
  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

  • 1 tablespoon gelatin

Instructions

  1. In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let sit for 5 minutes.
  2. Melt dark chocolate in a heatproof bowl over simmering water, stirring until smooth.
  3. In a separate bowl, whip heavy cream until soft peaks form.
  4. In another bowl, beat egg yolks with sugar until pale and creamy, then stir in melted chocolate and raspberry puree.
  5. Add the gelatin mixture and vanilla extract, mixing well.
  6. Fold in the whipped cream until combined.
  7. In another bowl, beat egg whites with salt until stiff peaks form, and then gently fold into the mousse mixture.
  8. Pour the mixture into a cake pan and refrigerate for at least 4 hours until set.
  9. Once set, remove from the pan and serve chilled.
