1 cup almond flour
2 tablespoons coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 cup cream cheese
1/2 cup Greek yogurt
1/4 cup honey
1 cup fresh raspberries
Instructions
Preheat the oven to 350°F (175°C) and line a square baking pan with parchment paper.
In a bowl, mix almond flour, coconut oil, maple syrup, and vanilla extract to form the crust. Press the mixture into the bottom of the prepared baking pan.
In another bowl, beat together cream cheese, Greek yogurt, and honey until smooth. Pour the mixture over the crust.
Evenly distribute raspberries on top of the cheesecake mixture.
Bake for 25-30 minutes or until set. Allow to cool before refrigerating for at least 2 hours before serving.
Notes
