Ingredients

  • 1 pound grilled chicken breast, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine quinoa, grilled chicken, cherry tomatoes, cucumber, olives, feta cheese, red onion, and parsley.
  2. In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
