Gordon Ramsay Sticky Toffee Pudding

  • 200 grams pitted dates
  • 250 ml boiling water
  • 1/2 teaspoon baking soda
  • 80 grams unsalted butter, softened
  • 150 grams brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 180 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 200 ml double cream
  • 200 grams toffee sauce

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, soak pitted dates in boiling water for 10 minutes, then blend until smooth.
  3. In a separate bowl, cream together the softened butter and brown sugar until fluffy.
  4. Add the eggs one at a time, mixing well after each. Then stir in the vanilla extract.
  5. Combine flour, baking powder, and salt, gradually adding to the wet mixture.
  6. Fold in the date puree until fully incorporated.
  7. Pour the batter into a greased baking dish and smooth the top.
  8. Bake for 30-35 minutes, or until a skewer comes out clean.
  9. Allow to cool slightly before serving with warm toffee sauce and double cream.

  • For an extra indulgent treat, drizzle more toffee sauce over the top before serving.
  • Serve warm for the best texture and flavor.
