Instructions

  1. Start by melting the dark chocolate in a bowl over simmering water.
  2. Once melted, let it cool slightly before preparing the eggs.
  3. Separate the egg whites and yolks, then whisk the sugar with the yolks until pale and creamy.
  4. Fold the melted chocolate into the egg yolk mixture.
  5. In a separate bowl, whisk the egg whites until stiff peaks form, and gently fold them into the chocolate mixture.
  6. In another bowl, whip the double cream until it forms soft peaks and fold into the mixture until combined.
  7. Transfer the mousse into serving dishes and refrigerate for at least 2 hours before serving.
