Garlic Parmesan Roasted Sweet Potatoes

Deliciously roasted sweet potatoes with garlic and parmesan.

  • 2 pounds sweet potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes.
  3. In a large bowl, combine sweet potatoes, olive oil, garlic, salt, and pepper.
  4. Toss until well coated, then spread evenly on a baking sheet.
  5. Roast for 25-30 minutes, stirring halfway through, until tender.
  6. Remove from the oven, sprinkle with parmesan cheese, and return to the oven for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, add more garlic.
  • Adjust the amount of parmesan to your taste.
