- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups brewed espresso, cooled
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder
- In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
- Dip each ladyfinger into the cooled espresso for a few seconds, then layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Layer half of the fresh raspberries over the mascarpone.
- Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
