Fresh Raspberry Tiramisu

A creamy and fruity version of the traditional tiramisu, featuring fresh raspberries.

Ingredients

  • 1 cup fresh raspberries
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups brewed espresso, cooled
  • 24 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  2. Dip each ladyfinger into the cooled espresso for a few seconds, then layer in a dish.
  3. Spread half of the mascarpone mixture over the ladyfingers.
  4. Layer half of the fresh raspberries over the mascarpone.
  5. Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
  6. Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.

Notes

  • For an extra touch, add a splash of raspberry liqueur to the espresso.
  • Using a hand mixer makes whipping the cream quicker and more efficient.
