Instructions

  3. In another bowl, whisk together brown sugar, vegetable oil, egg, and vanilla extract.
  4. Add the oat mixture to the wet ingredients and mix well.
  5. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in the chocolate chips.
  7. Distribute the batter evenly into the muffin tin.
  8. Bake for 18-20 minutes until a toothpick inserted comes out clean.
  9. Allow to cool in the tin for a few minutes before transferring to a wire rack.
