  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add the diced onion and garlic to the pot; sauté until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the broken lasagna noodles and cook until tender.
  5. Stir in the ricotta cheese, mozzarella, and crumbled turkey bacon until melted and combined.
  6. Serve hot with a sprinkle of Parmesan on top.

Notes

  • This soup can be made ahead and stored in the fridge for up to 3 days.
  • For a vegetarian option, omit the turkey bacon and use vegetable broth.
