- 1 cup crushed peppermint candies
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 large eggs
- 1 tablespoon food coloring (red and green)
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour and salt, mixing until just combined.
- Divide the dough into two portions. Color one portion red and the other green with food coloring.
- Roll out each colored dough between two sheets of parchment paper. Layer them on top of each other and roll up tightly to form a log.
- Chill the log in the refrigerator for at least 30 minutes.
- Slice the log into rounds and place on a baking sheet.
- Bake for 10-12 minutes or until edges are just golden.
- Remove from oven and sprinkle crushed peppermint on top while still warm.
