Easy Chicken Tortilla Soup

A warm and comforting chicken tortilla soup that’s both easy to make and healthy. Perfect for any weeknight dinner.

  • 1 pound chicken breast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 1 cup tortilla strips
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
  2. Add the chicken breast and cook until it’s no longer pink.
  3. Stir in the diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, and salt. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Serve hot, garnished with tortilla strips, avocado, and cilantro.

Notes

  • For added spice, include jalapeños or hot sauce.
  • This soup is great for meal prep and freezes well.
