- 1 pound chicken breast
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 1 cup tortilla strips
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened.
- Add the chicken breast and cook until it’s no longer pink.
- Stir in the diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, and salt. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot, garnished with tortilla strips, avocado, and cilantro.
