  • 4 slices turkey bacon
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully cut the top off the pumpkin and scoop out the seeds and strings.
  3. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  4. Add carrots, celery, onion, and garlic to the skillet and sauté until softened.
  5. Stir in the chopped turkey bacon, thyme, salt, pepper, and broth.
  6. Fill the pumpkin with the mixture and place the lid back on.
  7. Bake in the preheated oven for about 1 hour, or until the pumpkin is tender.
