  • 2 cups powdered sugar

  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 15×10 inch jelly roll pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs and sugar until light and fluffy. Stir in the pumpkin and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 15-20 minutes or until the cake springs back when lightly touched.
  7. Immediately invert the cake onto a towel sprinkled with powdered sugar, then roll it up in the towel and let it cool.
  8. For the filling, beat together cream cheese, powdered sugar, and vanilla until smooth.
  9. Once the cake is cool, unroll it and spread the cream cheese mixture evenly over the surface.
  10. Roll the cake back up tightly and refrigerate for at least one hour before slicing.
