Decadent Spiced Pumpkin Cheesecake with Whipped Cream

  • ½ cup unsalted butter, melted
  • 1 cup sugar
  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until well blended. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat together the cream cheese and sugar until smooth. Add the pumpkin puree, eggs, vanilla, and spices, mixing until fully combined.
  4. Pour the pumpkin mixture over the crust in the springform pan.
  5. Bake for 60 minutes, or until the center is set.
  6. Cool to room temperature and then refrigerate for at least 4 hours before serving.
  7. Before serving, whip the heavy cream and spread it over the cheesecake.

Notes

  • For extra flavor, consider adding a pinch of allspice.
  • Serve with caramel sauce on the side for drizzling.
