- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup sugar
- 1 can (15 oz) pumpkin puree
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 teaspoon salt
- 1 cup cream cheese, softened
- 1 cup heavy cream
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter until well blended. Press the mixture into the bottom of a springform pan.
- In another bowl, beat together the cream cheese and sugar until smooth. Add the pumpkin puree, eggs, vanilla, and spices, mixing until fully combined.
- Pour the pumpkin mixture over the crust in the springform pan.
- Bake for 60 minutes, or until the center is set.
- Cool to room temperature and then refrigerate for at least 4 hours before serving.
- Before serving, whip the heavy cream and spread it over the cheesecake.
