Crispy Vegetarian Egg Rolls

Ingredients

  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 10 egg roll wrappers
  • Oil for frying

Instructions

  1. In a skillet, heat sesame oil over medium heat. Add garlic, cabbage, carrots, and green onions. Stir-fry until vegetables are tender.
  2. Stir in soy sauce and remove from heat. Allow mixture to cool.
  3. Place a tablespoon of the filling onto each egg roll wrapper. Roll and seal edges with water.
  4. Heat oil in a deep fryer or large pot. Fry egg rolls in batches until golden brown.
  5. Drain on paper towels and serve hot.

Notes

  • For extra crunch, you can add chopped bell peppers or bean sprouts.
  • Serve with sweet chili sauce for dipping.
