Crispy Sweet Potato & Red Lentil Patties That Delight

Ingredients

  • 2 medium sweet potatoes
  • 1 cup red lentils
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Boil the sweet potatoes until tender, about 15 minutes.
  2. Cook the red lentils according to package instructions.
  3. In a skillet, sauté the onion and garlic until soft.
  4. In a bowl, mash sweet potatoes and mix with lentils, onion, garlic, spices, and parsley.
  5. Add breadcrumbs to bind the mixture.
  6. Form patties and heat olive oil in a skillet.
  7. Cook each patty for about 4 minutes on each side until golden brown.
  8. Serve warm.

Notes

  • For added flavor, try mixing in some chili flakes.
  • These patties freeze well for up to 3 months.
