Ingredients

  • 4 medium-sized potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sour cream
  • 2 tablespoons chopped chives
  • 1 teaspoon garlic powder
  • Salt to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes and slice them into thin, even slits without cutting all the way through.
  3. Drizzle with olive oil and sprinkle with garlic powder and salt.
  4. Bake for 25-30 minutes until crispy.
  5. Remove from the oven and fill the slits with cheese and bacon bits.
  6. Return to the oven for an additional 5-10 minutes until cheese is melted and bubbly.
  7. Garnish with sour cream and chives before serving.
