Creamy Tuscan Ravioli Soup

A rich and creamy soup loaded with delicious ravioli and Tuscan flavors.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 package refrigerated cheese ravioli
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic and cook for another minute.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Stir in the heavy cream and Italian seasoning.
  5. Add the spinach and ravioli, and cook until the ravioli are tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • For extra flavor, consider adding freshly grated Parmesan cheese on top before serving.
  • Using frozen ravioli can also work in this recipe.
