Creamy Sun-Dried Tomato Chicken Orzo

A deliciously creamy dish combining sun-dried tomatoes and chicken with orzo for a quick meal that’s sure to impress.

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup Parmesan cheese, grated
  • ¼ cup fresh basil, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add sun-dried tomatoes and cook for 2-3 minutes.
  3. Stir in the chicken broth and bring to a boil. Add the orzo and reduce heat to low. Cover and simmer for 10-12 minutes until orzo is tender.
  4. Once the orzo is cooked, return the chicken to the skillet. Pour in the heavy cream and season with garlic powder, salt, and pepper. Stir well.
  5. Sprinkle the Parmesan cheese and fresh basil over the top, stirring until well combined.
  6. Cook for an additional 2-3 minutes until everything is heated through. Serve warm.

Notes

  • This dish is best served fresh, but you can store leftovers in the refrigerator.
  • Replace chicken with shrimp for a delightful seafood variation.
