- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
- ½ cup Parmesan cheese, grated
- ¼ cup fresh basil, chopped
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 6-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add sun-dried tomatoes and cook for 2-3 minutes.
- Stir in the chicken broth and bring to a boil. Add the orzo and reduce heat to low. Cover and simmer for 10-12 minutes until orzo is tender.
- Once the orzo is cooked, return the chicken to the skillet. Pour in the heavy cream and season with garlic powder, salt, and pepper. Stir well.
- Sprinkle the Parmesan cheese and fresh basil over the top, stirring until well combined.
- Cook for an additional 2-3 minutes until everything is heated through. Serve warm.
