  • 1 cup queso cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas

  • 1/4 cup chopped cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix shredded chicken, queso cheese, half of the enchilada sauce, onions, cilantro, garlic powder, and cumin.
  3. Warm the tortillas to make them pliable.
  4. Spoon the chicken mixture onto each tortilla, roll them up, and place them seam side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with extra queso cheese.
