Creamiest Instant Pot Loaded Baked Potato Soup

A rich and creamy loaded baked potato soup made quickly in the Instant Pot, featuring turkey bacon and chicken ham for added flavor.

  • 4 large russet potatoes
  • 8 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Set the Instant Pot to sauté mode. Cook the turkey bacon until crispy, then remove and crumble.
  2. Add the onion and garlic to the pot, sautéing until translucent.
  3. Peel and cube the potatoes, adding them to the pot along with the chicken ham.
  4. Pour in the chicken broth and season with salt and pepper. Seal the lid and cook on high pressure for 15 minutes.
  5. Once done, quick release the pressure. Add the heavy cream and blend until smooth using an immersion blender.
  6. Stir in the cheddar cheese until melted. Top with crumbled bacon and green onions before serving.

Notes

  • For a spicier soup, add diced jalapeños.
  • Substitute regular bacon for a richer flavor.
